Sierra Steak
This is actually a relatively new cut of meat that was just “discovered” during a five year study by the beef industry. It is similar to a flank steak, but actually comes from the chuck primal. It has incredibly beefy flavor and is great on its own, or as fajita meat. You can use it any way that you would a flank.
There are only two of these in an entire animal, so they are rare!
High heat grilling is the best way to cook this steak. Make sure the rest the steak and then cut across the grain for best results. Make sure not to overcook this cut!
Sold by the steak and they average .85 pounds each.
